Ingredients

2 heads broccoli, chopped
1 onion, diced
4 garlic cloves, minced
1 potato, diced
1 Tbsp olive oil
4 cups vegetable broth
1/2 cup Greek yogurt
Salt and pepper to taste

Optional
red pepper flakes
pumpkin seeds
parmesan cheese
lemon wedges

Directions

Step 1 – Start With the Aromatics

Heat olive oil in a large pot over medium heat and cook the onion for about 5–6 minutes until softened. Add garlic and stir constantly for another minute until fragrant. (Garlic hitting warm oil instantly makes the soup feel more comforting and alive.)

You want the garlic softened and aromatic—not browned or bitter.

Step 2 – Simmer Until Tender

Add broccoli, potato, vegetable broth, salt, and pepper. Bring everything to a simmer and cook for about 20 minutes until the broccoli and potatoes become very tender. (The potato helps naturally thicken the soup and gives it a creamier texture without relying heavily on cream.)

The broccoli should stay vibrant green instead of turning dull gray.

Step 3 – Blend Until Smooth

Carefully blend the soup until smooth using an immersion blender or regular blender. (A smooth texture helps the soup feel richer and more comforting even though the ingredients are actually very simple.)

If the soup feels too thick, add a splash of broth to loosen it slightly.

Step 4 – Add Creaminess Carefully

Lower the heat before stirring in Greek yogurt slowly until fully incorporated. (Adding dairy over high heat can cause separation and ruin the smooth texture.)

The yogurt helps create creaminess while still keeping the soup lighter than traditional heavy cream-based soups.

Step 5 – Keep Simple Meals Powerful

Top with pumpkin seeds, parmesan, red pepper flakes, or lemon juice if desired. Meals like this work well because they feel warm and satisfying while naturally including vegetables, fiber, and hydration. (Sometimes the healthiest meals are simply the ones that make eating vegetables easier and more enjoyable.)

This soup also freezes extremely well for future low-energy days.
