Ingredients

Steak

1 lb flank or skirt steak
2 Tbsp. olive oil
2 Tbsp. lime juice
2 garlic cloves, minced
1/2 tsp. kosher salt
1/4 tsp. black pepper
1/2 tsp. chili powder
1/2 tsp. cumin

Tacos

6–8 small tortillas (corn or flour)
1/2 cup chopped onion
1/2 cup chopped cilantro
1 lime, cut into wedges

Optional: salsa, avocado, cheese

Directions

Step 1 – Marinate the steak In a bowl, mix olive oil, lime juice, garlic, salt, pepper, chili powder, and cumin. Place the steak in the mixture and coat it well. Let it sit for at least 30 minutes. Longer is better if you have time. (this is where most of the flavor comes from, don’t rush it if you don’t have to)

Step 2 – Prep the toppings Chop the onion and cilantro and set them aside. Cut the lime into wedges so it’s ready to go. (having everything ready before cooking = less stress later)

Step 3 – Cook the steak Heat a pan or grill over high heat. Add the steak and cook for about 3–4 minutes per side, depending on thickness. You want a nice char on the outside. (high heat = flavor, don’t be scared of it)

Step 4 – Rest and slice Remove the steak and let it rest for about 5 minutes. Slice it thin against the grain so it stays tender. (cutting against the grain = easier to chew, always worth it)

Step 5 – Warm the tortillas Heat tortillas in a dry pan for about 20–30 seconds per side or until soft and slightly toasted. (cold tortillas ruin tacos instantly, don’t skip this)

Step 6 – Build the tacos Add sliced steak to each tortilla, then top with onion, cilantro, and a squeeze of lime. Add extras if you want, but don’t overload them.
