Ingredients

Fresh Pasta

1 cup all-purpose flour
2 eggs
Pinch of salt

Chicken

2 Tbsp. olive oil
2 boneless, skinless chicken breasts
3/4 tsp. kosher salt
1/2 tsp. black pepper

Sauce

3 garlic cloves, finely chopped
1 cup heavy cream
3/4 cup chicken broth
1/2 cup grated Parmesan
1/2 cup sun-dried tomatoes
2 cups fresh spinach

Directions

Step 1 – Make the fresh pasta
On a clean surface, pile the flour and make a small well in the center. Crack the eggs into the well and add a pinch of salt. Slowly mix the eggs into the flour with a fork, then use your hands to bring it together into a dough. Knead for about 8–10 minutes until smooth and slightly elastic. Let it rest for 10 minutes. (this is the only “effort” part — once you do it, you’ll feel different)

Roll the dough thin using a rolling pin or pasta machine, then cut into fettuccine-style strips. Lightly flour so it doesn’t stick.

Step 2 – Cook the pasta
Bring salted water to a boil and cook fresh pasta for about 2–3 minutes. It cooks fast. Drain and set aside. (fresh pasta waits for no one — don’t overcook it)

Step 3 – Cook the chicken
Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper and cook 5–6 minutes per side until golden and fully cooked. Let it rest, then slice. (resting = juicy, always)

Step 4 – Build the sauce
In the same pan, add garlic and cook for 30 seconds. Pour in cream and chicken broth and bring to a gentle simmer.

Step 5 – Add flavor
Stir in Parmesan until smooth, then add sun-dried tomatoes and spinach. Cook until spinach wilts. (this is where it starts looking legit)

Step 6 – Combine
Add the fresh pasta and sliced chicken to the sauce. Toss gently until everything is coated. (fresh pasta absorbs flavor fast — don’t overwork it)

Step 7 – Serve
Serve immediately while warm and glossy. (this is a “right now” meal)
