Creamy Tuscan Chicken Pasta

Ingredients

Fresh Pasta

1 cup all-purpose flour
2 eggs
Pinch of salt

Chicken

2 Tbsp. olive oil
2 boneless, skinless chicken breasts
3/4 tsp. kosher salt
1/2 tsp. black pepper

Sauce

3 garlic cloves, finely chopped
1 cup heavy cream
3/4 cup chicken broth
1/2 cup grated Parmesan
1/2 cup sun-dried tomatoes
2 cups fresh spinach

Directions

Step 1 – Make the fresh pasta
On a clean surface, pile the flour and make a small well in the center. Crack the eggs into the well and add a pinch of salt. Slowly mix the eggs into the flour with a fork, then use your hands to bring it together into a dough. Knead for about 8–10 minutes until smooth and slightly elastic. Let it rest for 10 minutes. (this is the only “effort” part  once you do it, you’ll feel different)

Roll the dough thin using a rolling pin or pasta machine, then cut into fettuccine-style strips. Lightly flour so it doesn’t stick.

Step 2 – Cook the pasta
Bring salted water to a boil and cook fresh pasta for about 2–3 minutes. It cooks fast. Drain and set aside. (fresh pasta waits for no one — don’t overcook it)

Step 3 – Cook the chicken
Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper and cook 5–6 minutes per side until golden and fully cooked. Let it rest, then slice. (resting = juicy, always)

Step 4 – Build the sauce
In the same pan, add garlic and cook for 30 seconds. Pour in cream and chicken broth and bring to a gentle simmer.

Step 5 – Add flavor
Stir in Parmesan until smooth, then add sun-dried tomatoes and spinach. Cook until spinach wilts. (this is where it starts looking legit)

Step 6 – Combine
Add the fresh pasta and sliced chicken to the sauce. Toss gently until everything is coated. (fresh pasta absorbs flavor fast — don’t overwork it)

Step 7 – Serve
Serve immediately while warm and glossy. (this is a “right now” meal)
