Filet Mignon You Didn’t See Coming

Ingredients

Steak
2 filet mignon steaks (6–8 oz each)
1 tsp. kosher salt
1/2 tsp. black pepper
1 Tbsp. butter
Red Wine Sauce
1/2 cup red wine
1/2 cup beef broth
1 Tbsp. butter
Green Beans
2 cups green beans, trimmed
1 Tbsp. olive oil
1/4 tsp. salt

Directions

Step 1 – Prep the steak properly Pat the steaks completely dry with paper towels so they sear instead of steam. Season both sides evenly with salt and pepper, pressing it in slightly so it sticks. If you have time, let them sit out for 10–15 minutes so they cook more evenly. (small step, big difference)

Step 2 – Sear with intention Heat a pan over medium-high heat and let it get properly hot. Add a small amount of oil, just enough to coat the surface. Place the steaks in and leave them alone for 3–4 minutes so a deep crust forms. Flip and cook another 3–4 minutes until browned on the second side. (don’t move it early — the crust builds on patience)

Step 3 – Let it rest Remove the steaks and place them on a plate. Let them rest for at least 5 minutes so the juices stay inside the meat instead of running out when cut. (this is the difference between juicy and dry)

Step 4 – Build the sauce Using the same pan, lower the heat slightly and add the red wine and beef broth. As it bubbles, scrape up the browned bits from the bottom that’s where the flavor is. Let it simmer for 3–5 minutes until reduced by about half. Stir in butter at the end until smooth and glossy. (this is what makes it feel expensive)

Step 5 – Cook the green beans In a separate pan, heat olive oil over medium heat and cook the green beans with a pinch of salt for 5–6 minutes until tender with a slight bite and a little browning on the edges. (you want color, not softness)

Step 6 – Serve clean Place the steak on the plate and spoon a light layer of sauce over the top. Add the green beans on the side and take a second to arrange everything so it looks intentional. (presentation does more than you think)
