Ingredients
2 ears corn (husk removed)
1 Tbsp. butter
1/3 cup mayonnaise
1/3 cup crumbled cotija cheese (or feta if needed)
1/2 cup crushed Hot Cheetos
1/2 tsp. chili powder
1 lime, cut into wedges
Optional: hot sauce, extra cheese
Directions
Step 1 – Cook the corn Bring a pot of water to a boil and add the corn. Boil for about 8–10 minutes until tender. You can also grill it or cook it in a pan if you want a little char, but boiling is the easiest and safest way to start. (we’re keeping this low stress, high reward)
Step 2 – Dry and butter Remove the corn and let it cool just enough to handle. Pat it lightly dry, then rub butter all over while it’s still warm so it melts into the corn. (warm corn = butter actually sticks instead of sliding off)
Step 3 – Add the base layer Spread a layer of mayonnaise over each ear of corn. Don’t go too thick, just enough to coat it evenly. (this is what holds everything together trust it)
Step 4 – Coat with the good stuff Sprinkle cotija cheese over the corn, pressing it lightly so it sticks. Then roll or sprinkle the crushed Hot Cheetos all over. (yes, this is chaotic… but it works)
Step 5 – Finish it Sprinkle chili powder over the top and squeeze fresh lime juice across everything. (roll the lime before cutting more juice, less effort)
Step 6 – Serve immediately Serve while warm and slightly messy.
Rizz Tip
“If they’re comfortable eating corn in front of you… you’re already in a good spot.” 😏
