Ingredients

1 lb chicken breast or thighs
1 onion, diced
3 carrots, sliced
3 celery stalks, sliced
3 garlic cloves, minced
1 Tbsp olive oil
6 cups chicken broth
1 tsp thyme
1/2 tsp turmeric
Salt and pepper to taste
1 cup spinach
1 cup egg noodles or rice

Optional
parsley
lemon wedges
red pepper flakes

Directions

Step 1 – Build the Base Slowly

Heat olive oil in a large pot over medium heat and add onion, carrots, and celery. Cook for about 8–10 minutes until softened and fragrant. Add garlic and continue cooking another minute. (This slow vegetable base is what gives homemade soup that deep comforting flavor people always remember.)

The vegetables should soften naturally without becoming mushy.

Step 2 – Layer in the Broth and Chicken

Add chicken broth, thyme, turmeric, salt, and pepper, then place the chicken directly into the pot. Bring everything to a gentle simmer and cook for about 20 minutes until the chicken becomes fully cooked and tender. (Low gentle simmering keeps the chicken soft instead of tough.)

The broth should stay clear and flavorful rather than aggressively boiling.

Step 3 – Shred the Chicken Properly

Remove the chicken temporarily and shred it using two forks before returning it back into the soup. (Shredded chicken spreads throughout the soup better and makes every bite feel balanced.)

Add noodles or rice during this stage and continue cooking until tender.

Step 4 – Finish With Fresh Ingredients

Stir in spinach during the final few minutes so it wilts gently into the broth. Add parsley or lemon juice right before serving if desired. (Fresh herbs and citrus wake soups back up and keep them from tasting flat.)

The lemon especially helps brighten the broth and balance the richer flavors.

Step 5 – Keep Comfort Food Around

Soups like this are perfect for meal prep, recovery days, stressful weeks, or nights where cooking feels exhausting. Having balanced meals already available often makes healthier choices much easier during difficult or busy periods. (Sometimes nourishment is simply making things easier on yourself.)
