Ingredients
Potatoes
2 large russet potatoes
1 Tbsp. olive oil
1/2 tsp. kosher salt
Filling
1/2 lb ground beef
1/2 tsp. salt
1/4 tsp. black pepper
1/2 tsp. garlic powder
1/2 cup shredded cheese
1/4 cup sour cream
1/4 cup green onions
Upgrade Layer
1/2 cup crushed Doritos or chips
2 Tbsp. queso
Optional: bacon bits, hot sauce, jalapeños
Directions
Step 1 – Bake the potatoes Preheat oven to 425°F. Wash, dry, and rub potatoes with olive oil and salt. Bake directly on the rack for 45–50 minutes until soft inside and crispy outside. (this is your base — don’t rush it)
Step 2 – Cook the meat Heat a pan over medium heat and cook ground beef with salt, pepper, and garlic powder for 5–7 minutes until browned. (get some color — that’s where the flavor is)
Step 3 – Open them up Slice the potatoes down the middle and gently press the sides so they open. (don’t destroy them — just open them up)
Step 4 – Build it up Add the beef and cheese first so it melts into the potato, then layer crushed chips, queso, sour cream, and green onions. (this is where it goes from normal to crazy)
Step 5 – Serve Serve immediately while everything is hot, melty, and slightly out of control. (messy in the best way)
