Ingredients

Lobster

2 lobster tails
1 Tbsp. olive oil
1/2 tsp. kosher salt
1/4 tsp. black pepper

Garlic Butter

3 Tbsp. unsalted butter
2 garlic cloves, finely minced
1 tsp. lemon juice

Mashed Potatoes

2 large russet potatoes, peeled and cut into chunks
3 Tbsp. butter
1/3 cup milk (warm)
1/2 tsp. kosher salt
1/4 tsp. black pepper

To Serve

Lemon wedges

Directions

Step 1 – Start the mashed potatoes Peel and cut the potatoes into evenly sized chunks so they cook at the same rate. Place them in a pot and cover with cold water, then add a pinch of salt. Bring to a boil over medium-high heat and cook for about 15–18 minutes, or until a fork slides in easily with no resistance. Drain them well and let them sit in the pot for a minute so excess steam escapes. Add butter, warm milk, salt, and pepper, then mash until smooth and creamy. If they feel too thick, add a little more milk until they loosen up. (warm milk keeps them smooth, cold milk makes them stiff  small detail, big difference)

Step 2 – Prep the lobster tails Using kitchen shears, cut down the top center of each lobster shell, stopping just before the tail fin. Gently pull the shell apart and lift the meat up so it sits on top while still attached at the base. Brush the meat lightly with olive oil and season with salt and pepper. (this is called piggybacking and it instantly makes it look like you’ve done this before)

Step 3 – Broil the lobster Preheat your broiler and place the lobster tails on a baking sheet. Broil them about 5 to 6 inches from the heat for 8 to 10 minutes, depending on size, until the meat is opaque and lightly golden at the edges. Keep an eye on it because lobster cooks fast and goes from perfect to rubbery quicker than you think. (you’re aiming for tender, not chewy)

Step 4 – Make the garlic butter While the lobster cooks, melt the butter in a small pan over low heat. Add the garlic and cook for about 30 seconds to 1 minute until it smells amazing but hasn’t browned. Stir in the lemon juice and remove from heat. (burnt garlic ruins the whole vibe  keep it low and controlled)

Step 5 – Plate it like you meant to Spoon the mashed potatoes onto each plate and smooth them out slightly. Place the lobster tails on top or just off to the side, then drizzle the garlic butter over the meat. Serve with fresh lemon wedges so you can squeeze a little over the lobster right before eating. (that fresh lemon at the end makes everything pop and makes it feel restaurant-level)

(this is the “I’m not playing around tonight” dinner)

“If they start playing with their hair or adjusting their clothes while talking to you, it’s usually a sign they’re trying to look good for you.”
