Ingredients

Chicken

2 boneless, skinless chicken breasts, cut into small pieces
1 Tbsp. olive oil
1/2 tsp. kosher salt
1/4 tsp. black pepper
1/2 tsp. chili powder
1/2 tsp. cumin

Quesadillas

4 large tortillas
1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)

Toppings

1/2 cup chopped onion
1/2 cup chopped cilantro
1 lime, cut into wedges

Optional: sour cream, salsa, hot sauce

Directions

Step 1 – Cook the chicken Pat the chicken dry, then season with salt, pepper, chili powder, and cumin. Heat olive oil in a pan over medium-high heat and cook the chicken for about 5–7 minutes until browned and fully cooked. (a little char = a lot more flavor, don’t rush it)

Step 2 – Prep toppings Chop the onion and cilantro and set them aside. Cut the lime into wedges so everything’s ready before you start assembling. (this makes you look organized even if you’re not)

Step 3 – Build the quesadillas Place a tortilla in a pan over medium heat. Sprinkle a layer of cheese, then add some chicken, then a little more cheese, and top with another tortilla. (cheese on both sides = everything sticks together instead of falling apart mid-bite)

Step 4 – Cook until golden Cook for about 2–3 minutes on the first side until the bottom is golden and the cheese starts melting. Carefully flip and cook another 2–3 minutes until the other side is crisp and everything is melted inside.

Step 5 – Slice and serve Remove from the pan, let it sit for about a minute, then slice into triangles. Top with onion, cilantro, and a squeeze of lime. Add sour cream or salsa if you want. (letting it sit keeps the cheese from sliding everywhere when you cut it.

“If you feel nervous, slow everything down  your movements, your voice, even how you breathe. Calm looks like confidence, even if you’re faking it.” 😏
