Ingredients
Chicken
2 Tbsp. olive oil
2 Tbsp. softened butter
1 whole chicken (3–3.5 lb)
5 garlic cloves, finely minced
1 tsp. kosher salt
1/2 tsp. black pepper
1 tsp. paprika
1 tsp. dried thyme
1 lemon, halved
Potatoes
1 lb baby potatoes, halved
1 Tbsp. olive oil
1/2 tsp. salt
Asparagus
1 bunch asparagus, trimmed
1 Tbsp. olive oil
1/4 tsp. salt
Directions
Step 1 – Preheat and prep Preheat your oven to 425°F and place the rack in the center. Lightly grease or line a roasting pan so nothing sticks. (starting hot is the difference between crisp skin and disappointment)
Step 2 – Prepare the chicken Pat the chicken completely dry with paper towels so the skin actually crisps. In a bowl, mix olive oil, butter, garlic, salt, pepper, paprika, and thyme until combined. Rub it all over the chicken, getting into every surface and gently under the skin where you can. Place the lemon halves inside the cavity so it steams from the inside while roasting. (this is where all the flavor lives, don’t rush it)
Step 3 – Prep the potatoes Toss the halved potatoes with olive oil and salt until evenly coated, then spread them around the chicken cut-side down so they get proper contact with the pan. (cut-side down = real browning, not soft potatoes)
Step 4 – Roast the chicken Place the pan in the oven and roast for about 60 minutes. About halfway through, rotate the pan so everything cooks evenly and the skin colors properly. (set a timer, this isn’t a freestyle moment)
Step 5 – Add the asparagus Toss the asparagus with olive oil and salt, then add it to the pan during the last 15 minutes of cooking so it stays bright and slightly crisp. (too early and it turns soft and lifeless)
Step 6 – Check for doneness Insert a thermometer into the thickest part of the thigh without touching bone — it should read 165°F. If you don’t have one, pierce near the thigh and make sure the juices run clear. (this is how you avoid dry chicken)
Step 7 – Let it rest Remove the chicken and let it rest for about 10 minutes before carving so the juices stay inside instead of spilling out. (resting is what keeps it juicy)
Step 8 – Serve Carve the chicken and plate with the roasted potatoes and asparagus. Spoon the pan juices over everything so it actually tastes finished. (those juices are doing more than you think)
