Ingredients
Protein
1 lb ground beef or ground turkey
1 Tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt + pepper

Nacho Base
4–5 oz tortilla chips or protine chips
1 cup shredded cheese

Fresh Toppings
1/2 cup diced tomato
1/4 cup diced red onion
1/4 cup sliced jalapeños
Optional: shredded lettuce or green onions

Sauce
1/2 cup Greek yogurt
2 Tbsp salsa
1 tsp hot sauce
Salt + pepper

Directions

Step 1 – Build the Protein First
Heat olive oil in a pan over medium-high heat, then add the ground beef or turkey. Press it into the pan and let it sit for 2–3 minutes before breaking it apart so it builds some color.
This is where the nachos start becoming a real meal instead of just chips with hopes and dreams.

Step 2 – Season Like You Mean It
Break the meat into chunks, then add garlic powder, paprika, salt, and pepper. Keep cooking until the meat is fully browned and slightly crisp in a few spots.
You want texture here, not soft cafeteria meat. Let it actually earn its spot on the nachos.

Step 3 – Make the Gym Bro Sauce
In a bowl, mix Greek yogurt, salsa, hot sauce, salt, and pepper until smooth. Taste it and adjust so it has enough flavor before it goes on the nachos.
This is your high-protein sauce move. It gives you creamy “nacho energy” without just dumping straight sour cream everywhere.

Step 4 – Build the Chip Base
Spread the tortilla chips onto a baking sheet or oven-safe plate in an even layer. Don’t pile them into one mountain or the bottom chips will get ignored like leg day.
A wider layer means better topping coverage and fewer sad plain chips at the end.

Step 5 – Add Meat and Cheese
Spoon the cooked meat evenly over the chips, then sprinkle the shredded cheese across the top. Try to spread both all the way to the edges so every bite has something going on.
Nachos are only as good as their coverage. Nobody wants six loaded chips and then a desert of disappointment.

Step 6 – Melt It Down
Bake at 400°F for 5–7 minutes, or broil briefly until the cheese melts and the chips get warm. Watch it closely so the chips don’t burn.
You want melted cheese and crispy chips, not a smoky kitchen and regret.

Step 7 – Add the Fresh Toppings
Once the nachos come out, add diced tomato, red onion, jalapeños, and any greens you want. Add these after baking so they stay fresh and crunchy.
This is what keeps the whole thing from feeling too heavy and gives it that loaded restaurant look.

Step 8 – Drizzle the Sauce
Drizzle the Greek yogurt sauce over the top or serve it on the side if you want cleaner bites. Don’t drown everything at once unless you’re eating immediately.
If you’re meal prepping this, keep the sauce and fresh toppings separate so the chips don’t turn into nacho soup.

Step 9 – Challenge Before You Eat
Before sitting down, hit 20 pushups or a 30-second plank. You’re about to eat loaded nachos in a fitness cookbook, so at least pretend you’re responsible.
No scrolling while the cheese is perfect. Respect the melt.

Step 10 – Finish the Week Strong
Serve hot and eat it while the chips still have crunch. This is not the meal you let sit around while you “just check one thing.”
This is the bulk meal that feels like a reward but still brings protein, calories, and purpose.
