Ingredients
Chicken
1.25 lb chicken thighs
1 Tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper

Rice
1.5 cups jasmine rice (uncooked)
3 cups water
1/2 tsp salt

Finish
1 Tbsp butter

Directions

Step 1 – Commit to the Portion
Measure out the full 1.5 cups of rice and cook it using your standard method. Let it rest covered before fluffing so the texture finishes properly and doesn’t clump.
This is where most people fall short, so don’t scale it down just because it looks like a lot.

Step 2 – Prep the Chicken Like You Mean It
Pat the chicken dry and season it evenly on all sides. Keep the pieces similar in size so they cook evenly and don’t dry out in spots.
More volume means more room for mistakes, so clean prep actually matters here.

Step 3 – Build the Sear
Heat olive oil in a pan over medium-high and add the chicken in a single layer. Let it cook undisturbed for 5–6 minutes so it develops a real crust before flipping.
While it cooks, hit 20 pushups. You’re about to eat big, so move like it.

Step 4 – Finish Cooking with Control
Flip the chicken and cook until fully done, letting the second side build color as well. Don’t keep moving it around or you lose the texture you just built.
You’re looking for golden edges, not pale “I rushed this” chicken.

Step 5 – Add the Extra Calories
Lower the heat and add butter to the pan, letting it melt and coat the chicken. Move the chicken through it so everything gets covered evenly.
This is the easiest way to increase calories without making the meal harder to eat.

Step 6 – Rest and Slice
Let the chicken rest for a few minutes before slicing. This keeps it juicy and easier to portion into larger servings.
If it looks glossy and not dry after resting, you nailed it.

Step 7 – Build the Bowl
Add your full portion of rice, then layer the chicken over the top. Spoon any remaining butter from the pan over everything.
This should look like a serious meal, not something you’re picking at.

Step 8 – Eat Like You’re Trying to Grow
Sit down and eat the full portion without distractions. Don’t slow-roll it or leave half behind just because you feel full.
If you’re halfway through thinking “this is a lot,” good that’s the whole point.
