Ingredients
3 eggs
1 lb Sweet potatoes, diced
1 cup cooked chicken or beef
1 Tbsp olive oil
Salt + pepper

Optional slice avocados

Directions

Step 1 – Cook the Potatoes First
Heat oil in a pan over medium heat and add the diced potatoes in an even layer. Let them sit for a few minutes before stirring so they start to build a golden crust.
Continue cooking for 10–12 minutes, stirring occasionally, until the outsides are crispy and the insides are soft when pierced with a fork.
(This is your base texture crispy outside, soft inside. If you rush this, the whole bowl feels flat.)

Step 2 – Cook the Eggs Separately
In a separate pan, crack the eggs and cook over medium-low heat, stirring gently. Keep them moving just enough so they stay soft and slightly creamy.
Remove from heat while they still look slightly underdone they’ll finish cooking from residual heat.
(Overcooked eggs go dry fast. Soft eggs carry the whole bowl.)

Step 3 – Reheat the Protein
Add your cooked chicken or beef to the potato pan and let it warm through for a few minutes. Stir lightly so it heats evenly without breaking everything apart.
(This step reconnects everything without overcooking your protein.)

Step 4 – Combine Carefully
Add the eggs into the pan with the potatoes and protein. Gently fold everything together so you keep distinct textures instead of turning it into one mix.
(You’re combining, not mashing. You want bites with contrast.)

Step 5 – Taste and Adjust
Take a quick bite and add a pinch of salt, pepper, or even a little hot sauce if it needs it.
(This is where you dial it in so it doesn’t taste like “just ingredients.”)

Step 6 – Serve or Store
Serve immediately while everything is hot, or portion into containers if you’re prepping ahead.
(This is your “I fell behind but fixed it fast” meal simple, filling, and actually satisfying.)
