Ingredients
Chicken
1.5 lb chicken thighs
1 Tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper

Rice
1.5 cups jasmine rice
2.5 cups chicken broth or water
1/2 tsp salt

Flavor Base
1/2 onion, diced
1 carrot, shredded or finely diced
2 garlic cloves, minced

Finish
1 Tbsp butter
Optional: chopped parsley or green onion

Directions

Step 1 – Preheat and Set the Tray
Preheat your oven to 400°F and lightly grease a baking dish. You want a dish big enough for the rice to spread out and the chicken to sit on top without everything being smashed together.
This is a tray meal, not a rice brick with chicken hats.

Step 2 – Build the Rice Base
Add the jasmine rice, diced onion, carrot, garlic, broth, and salt directly into the baking dish. Stir everything together so the rice is evenly spread and the flavor base is mixed throughout.
This is where the rice starts becoming part of the meal instead of just something sitting under the chicken.

Step 3 – Season the Chicken Properly
Pat the chicken dry with paper towels, then coat it with olive oil, garlic powder, paprika, salt, and pepper. Rub the seasoning into all sides so every piece has flavor before it goes into the oven.
If you only season the top, the bottom half is going to taste like it got invited last minute.

Step 4 – Place the Chicken on Top
Lay the chicken thighs over the rice in an even layer, leaving a little space between each piece if possible. The chicken should sit on top of the rice so the juices drip down while everything bakes.
That is the whole move here: the chicken seasons the rice while the rice cooks underneath like it knows its role.

Step 5 – Cover and Bake First
Cover the baking dish tightly with foil and bake for 30 minutes. This traps steam so the rice can cook properly without drying out before the chicken is done.
While it bakes, hit 20 pushups or a 30-second plank. The oven is working, so you might as well too.

Step 6 – Uncover and Finish the Chicken
Remove the foil and bake for another 15–20 minutes, until the chicken is golden and the rice is tender. If the rice still looks wet, give it a few more minutes uncovered so the extra liquid can cook off.
You’re looking for juicy chicken, fluffy rice, and edges that look like they actually went through something.

Step 7 – Add the Butter Finish
Once the tray comes out, add the butter over the hot rice and gently fluff it through with a fork. Be careful not to destroy the chicken or mash the rice into one big situation.
This adds flavor, moisture, and that “yeah, I know what I’m doing” finish.

Step 8 – Let It Rest Before Serving
Let the whole dish sit for 5 minutes before portioning. This gives the rice time to settle and lets the juices redistribute instead of running everywhere.
If you scoop too early, you’re just making chaos with a spoon.

Step 9 – Portion Like You Mean It
Divide into two large servings and make sure each portion gets enough chicken and rice. Spoon any extra pan juices over the top so nothing gets left behind.
This should look like a full meal because it is a full meal.

Step 10 – Eat Big or Store Smart
Eat it hot, or portion it into containers for later. If you’re meal prepping, keep it sealed tight and reheat with a small splash of water so the rice comes back soft.
This is the kind of meal that makes “I’m trying to grow” sound believable.
